  7. 3 oz Flour

  8. 2 oz Butter

  9. 3/4 oz Icing sugar

  10. 2 ts Cold water

  11. --FILLING--

  12. Juice of a small lemon

  13. 2 oz Caster sugar

  14. 1 Egg

  15. Icing sugar for dusting

  16. 375F or Mark

  17. 5. Grease deep patty tins

  18. (makes approximately six tarts). Sift the flour into a

  19. bowl. Rub in the butter and add the icing sugar. Add

  20. suff cient of the water to makea moist dough. Roll out

  21. on a floured surface, cut into rounds and line the

  22. patty tins. Bake blind for 10 minutes. Remove from the

  23. 350F or Mark

  24. Meanwhile beat together the egg, caster sugar and lemon juice. Fill the pastry cases with the mixture

  25. and bake until set and the pastry is nicely browned.

  26. Serve hot or cold, but do not chill in the

  27. refrigerator.
