  1. 9 large avocados (about 3 pounds)

  2. 1 medium Roma tomato (about 1/4 pound), finely chopped

  3. 1/4 cup finely chopped cilantro

  4. 2 tablespoons thinly sliced scallions

  5. 1 to 2 medium serrano chiles , seeded and minced

  6. 1/4 cup freshly squeezed lime juice

  7. 1 tablespoon kosher salt

  1. Halve avocados, remove the pits, and scoop the flesh into a large mixing bowl. Mash with the back of a large fork or a potato masher to make a chunky paste. Add tomato, cilantro, scallions, chiles, lime juice, and salt, and stir to combine. Taste, adjust seasoning as needed, and serve immediately.
