  1. Fairy Cakes

  2. 2 (8-ounce) packages cream cheese

  3. 3/4 cup sugar

  4. 2 eggs

  5. 1 tablespoon lemon juice

  6. 1 teaspoon vanilla

  7. Cherry pie filling

  8. Vanilla wafers

  9. Heat oven to 325 degrees. Line muffin pans with paper baking cups.

  10. Mix cream cheese, sugar, eggs, lemon juice and vanilla in medium

  11. bowl until light and fluffy. Place vanilla wafer on the bottom of

  12. each paper baking cup. Fill each cup full with cream cheese mixture.

  13. 325 degrees for 15 to 20 minutes. Cool slightly. Top each fairy cake with 1 tablespoon cherry pie filling.
