  1. 1 cup Cooked couscous

  2. 1 Scallion,; thinly sliced

  3. 1 Rib celery,; finely diced

  4. 1 cup Smoked or regular cooked chicken,; cut into bitesize

  5. 1 cup Thawed frozen peas

  6. 1 ounce Blue cheese

  7. cup Mayonnaise

  8. 1 teaspoon Dijon mustard

  9. Rice vinegar to taste

  10. Chopped fresh parsley

  1. In a mixing bowl combine the couscous, scallion, celery, chicken and peas.

  2. In another mixing bowl combine blue cheese, mayonnaise, mustard and rice vinegar to taste; season with salt and pepper.
