  2. 1 cup finely minced celery

  3. 1 cup finely minced onion

  4. 1 cup finely minced carrot

  5. 1/4 cup butter

  6. 1/2 cup garbanzo beans

  7. 1/2 cup kidney beans

  8. 1/2 cup whole dried peas

  9. 1/2 cup white pea beans

  10. 3/4 cup sliced carrots

  11. 3/4 cup coarsely chopped onion

  12. 3/4 cup sliced celery

  13. 3/4 cup chopped bell pepper

  14. 1/2 cup rice or barley

  15. 1 cup shell macaroni

  16. 2 tablespoons minced parsley

  17. 1 teaspoon oregano

  18. 1 teaspoon basil

  19. 2 teaspoons soy sauce

  20. Pepper to taste

  21. Parmesan cheese

  22. Slowly saut? finely minced onion, celery and carrot in butter until very brown. Add peas and beans and about 3 quarts of water.

  23. 2 to 2 1/2 hours. Add the remaining vegetables, rice and spices and more water if necessary and cook another hour.

  24. About 20 minutes before serving time add the macaroni and more water if needed.

  25. Ladle into bowls and sprinkle with Parmesan cheese.

  26. Serve with crusty garlic bread.
