  1. 5 cups 800g / 28oz Cooked white beans

  2. 1/2 cup 31g / 1.1oz All-purpose flour

  3. 4 Eggs - separated

  4. 1/2 cup 99g / 3 1/2oz Sugar

  5. 1/2 cup 118ml Honey

  6. 5 Marron glaces - (candied chestnuts), roughly chopped

  7. 1/4 cup 59ml Thinly-sliced dried apricots

  8. 2 tablespoons 30ml Baking powder

  1. Recipe Instructions Preheat oven to 350F. Butter a 9-inch spring form pan. In a food processor, blend beans until smooth. Pour into a mixing bowl and add flour and egg yolks and mix well. Add sugar, honey, chestnuts, dried apricots and baking powder and stir to mix well. Whip egg whites to soft peaks and fold the bean mixture into the whites. Pour mixture into buttered pan and bake in oven for 50 minutes to an hour, or until a toothpick comes out clean. Cool to room temperature and serve.
