  4. 4 Egg whites

  5. 1 ts Pure vanilla extract

  6. 1 c Super fine sugar

  7. Chocolate Ganache:

  8. 6 oz Bittersweet chocolate --

  9. Broken in pieces

  10. 1/2 c Scalded whipping cream

  11. Preheat oven to 225 degrees. Have egg whites at about 70 degrees. Beat until foamy in an electric mixer or by hand. Add vanilla. While continuing to beat, add

  12. sugar one tablespoon at a time. When the mixture

  13. stands in stiff peaks on the beater, it is ready for baking. Fill a pastry bag with mixture and pipe onto

  14. parchment covered baking sheet, using star tip to

  15. create kisses. Bake about 1 hour or longer, depending

  16. on the size. Do not remove from the oven at once, but

  17. turn off the oven, open the door and leave them for at

  18. least 5 minutes. Cool gradually, away from a draft.

  19. Remove them from the sheet when cool. To prepare

  20. chocolate ganache, pour hot, scalded cream over

  21. chocolate. Blend until smooth. Cool. To fill

  22. meringues, crush the bottom lightly with the thumb

  23. while still warm. Fill the hollows with chocolate

  24. 3 dozen 1-inch Meringues
