  1. 1 heaping Tbsp black peppercorns

  2. 2 tsp whole cloves

  3. 2 tsp freshly grated nutmeg

  4. 1 tsp ground ginger

  1. Grind the peppercorns and cloves together in a spice grinder or coffee mill. Remove to a bowl and add nutmeg and ginger . Mix thoroughly. Funnel into an airtight jar and store in a cool, dark place.

  2. Use Four Spice mix to season soups, stews , and vegetables . May be doubled or tripled.

  3. Yield: about 1/8 cup
