  7. 10 c Zuccini -- grated

  8. 4 c Onion -- chopped

  9. 2 Green Peppers -- grated

  10. 5 tb Canning Salt

  11. 2 1/2 c White Vinegar

  12. 5 c Sugar

  13. 2 ts Dry Mustard

  14. 2 ts Celery seed

  15. 2 ts Turmeric

  16. 1 tb Cornstarch

  17. 1/2 ts Pepper

  18. Use only fresh, firm med sized zuccini. Wash and dry, but do not peel. Grate removing large seeds. Mix

  19. zuccini, onions, green pepper and canning salt. Let

  20. sit overnight.

  21. Drain and rinse mixture in cold water. Put mixture

  22. in large kettel. Add vinegar and remaining ingredients.

  23. Bring to a rolling boil. Cook for 10 min.

  24. Pack in hot sterilized pint jars. Cover with

  25. sterilized lids and hotwater process for 20 minutes.

  26. Ready to eat right away, but it's better if it ages a

  27. few days.
