  2. Title: Chinese Duck Sauce

  5. 1 lb Plums halved and pitted

  6. 1 lb Apricots halved and pitted

  7. 1 1/4 c Cider vinegar

  8. 3/4 c Water

  9. 1 c Cider vinegar

  10. 1 c Firmly packed brown sugar

  11. 1 c White sugar

  12. 1/2 c Lemon juice

  13. 1/4 c Chopped ginger

  14. 1 sm Onion sliced

  15. 1 (or more) serrano, seeded

  16. -and chopped 2 sm Garlic cloves sliced

  17. 4 ts Salt

  18. 1 tb Mustard seed toasted

  19. 1 Cinnamon stick

  20. Combine first four ingredients and cook over moderate heat for 5

  21. minutes. Reduce heat and simmer uncovered for 15 minutes.

  22. Combine the second four ingredients and boil for 10 minutes.

  23. Combine the remaining seven ingredients.

  24. Combine the above three sets of ingredients and simmer for 45 minutes.

  25. Remove cinnamon. Puree in food processor. Return to kettle and simmer until thick. Transfer to sterilized mason jar, cap loosely

  26. and let cool. Tighten caps and let stand in dark at least 2 weeks.

  27. Makes 2 pints.
