  2. 8 medium red potatoes -- cooked

  3. 1 medium onion -- coarsely chopp

  4. 1/2 pound mushrooms -- sliced

  5. 10 stalks asparagus -- cut into 1" pieces -- &

  6. washed

  1. Chop the potatoes into large chunks. Combine w/onion in a large nonstick fry pan. Cook over medium heat for 5 minutes, stirring frequently. Add mushrooms and asparagus. Cook, stirring frequently, for another 10 minutes. Add the spinach. Cook, stirring just until spinach wilts. Serve w/ a favorite sauce.
