  2. 4 plum tomatoes, sliced into 1/2;-cm-thick rounds

  3. Salt and freshly ground black pepper

  4. 120ml mayonnaise

  5. 5g chopped fresh basil

  6. 2g chopped fresh chives

  7. 2 tsp. dijon mustard

  8. 1g finely grated lemon zest

  9. 4 long sandwich rolls

  10. Cooked catfish fillets, about 350g total

  11. Lettuce leaves

  12. Thinly sliced red onion

  1. Catfish hero with seared tomatoes and herbed mayo 1) Heat a large griddle or nonstick skillet with cooking spray and set over medium-high heat.

  2. Season the tomatoes with salt and black pepper and add to the hot pan. Cook for 1 minute on each side, flipping with a spatula, until golden brown. Remove from the heat.

  3. In a small bowl, whisk together the mayonnaise, basil, chives, mustard and lemon zest.

  4. Spread the mayonnaise mixture on the rolls. Top with the seared tomatoes, catfish, lettuce leaves and red onion.
