  6. 1 ounce shiitake mushroom

  7. 1 cup natural california pistachio

  8. 2 shallot dried thyme salt ground white pepper freshly grated nutmeg

  1. Preparation : preheat oven to 350 degrees grease a loaf pan or terrine,line the bottom with parchment line the bottom and sides with grape leaves combine the chicken, shallots, and mustard in a food processor-process to a smooth puree add the egg whites-pulse just to blend add the cream and seasonings-pulse just to blend stir in the mushrooms, apples, and pistachios fry 1 teaspoon of the mixture in a small skillet adjust the seasonings to taste gently pour mixture into the lined loaf pan or terrine place into a larger baking pan or hotel pan pour hot water into the baking or hotel pan to come half-way up the sides of the loaf pan or terrine bake @ 350 degrees for 60 minutes remove from oven and allow to cool cover and chill for 4-72 hours or freeze for up to 3 months serve at room temperature or slightly chilled accompanied by a spicy mustard
