  2. 2 teaspoons coriander seeds

  3. 1 teaspoon cumin seeds

  4. 1/2 teaspoon mustard seeds

  5. 1 teaspoon fenugreek seeds

  6. 4 small dried red chiles

  7. 1 teaspoon peppercorns

  8. 10 fresh or dried curry

  9. - leaves -- (opt.)

  10. 1/2 teaspoon ground ginger

  11. 1 teaspoon ground turmeric

  1. Place all the seeds together in a sauté pan over medium heat and dry-roast, shaking pan often, until they give off an aroma, about 5 minutes.

  2. Combine all ingredients in a mortar or a clean coffee grinder and grind to a powder. Store in an airtight container.
