  1. For shortcrust pastry

  2. A 10" Flan dish or Pie tin.

  3. For Pie Crust:

  4. 2 1/2 cups flour

  5. 1 1/2 teaspoons salt

  6. 3/4 cup shortening

  7. 1/2 cup ice water

  8. For the Filling :

  9. 2 lbs potatoes (peeled/cut into halves)

  10. 8 oz onions (finely chopped)

  11. 4 oz cheddar cheese (grated)

  12. 1 tsp of mustard

  13. 2 oz margerine

  14. salt / pepper to taste

  15. An extra 2 oz cheddar cheese (grated) for topping.
