  1. 1 can pineapple chunks, drained

  2. 1 cucumber, peeled, seeded, and diced

  3. 1 small can jalapeno peppers

  4. 1/2 red bell pepper, diced

  5. 1/4 c. chopped chives

  6. 1 T. fresh ginger, grated

  7. 1/4 c. chopped fresh mint

  8. 3 T. fresh lime juice

  9. 2 T. firmly packed brown sugar

  10. 20 mins. ahead of time to allow flavors to blend, but not more than

  11. 3 hours ahead. Serve over fish or poultry. This is also good w/ fresh melon or mangoes in place of the pineapple.
