  1. 12 Tasmanian Pacific oysters

  2. 50g finely diced tomato

  3. 50g finely diced cucumber

  4. 50g finely diced celery

  5. 6 only chives

  6. 12 coriander leaves, finely chopped

  7. 50 ml balsamic vinegar

  1. Oysters should be fresh and half shelled.

  2. Blanch the tomato to remove the skin and seeds and finely dice. Cut the cucumber in half remove the seeds and finely dice. Finely dice the celery.

  3. Chop the chives and add to other diced vegetables. Mix through the coriander.

  4. Finally pick the leaves of the coriander and finely chop and spoon through the mix.

  5. Add the vinegar and spoon on top of each oyster just prior to serving
