  2. BUTTERMILK BISCUITS

  6. 4 c Flour

  7. 2 tb Baking powder

  8. 1 t Baking soda

  9. 3/4 ts Salt

  10. 1/2 tb Sugar

  11. 2/3 c Butter, softened

  12. 1 1/2 c Buttermilk

  13. 1/4 c Butter

  14. Sift flour with baking powder, soda, salt, and sugar.

  15. Cut in 2/3 cup butter until mixture resembles coarse

  16. meal. Add buttermilk, stirring until dry ingredients

  17. are moistened. Turn dough out onto a lightly floured

  18. surface; knead lightly 4 or 5 times. Roll dough to

  19. 1/2 inch thickness; cut with a

  20. 2 1/2 inch biscuit

  21. cutter. Place biscuits on a lightly greased baking

  22. sheet. Brush tops with 1/4 inch melted butter. Bake

  23. 450 F for 8 minutes or until golden brown.

  24. Note: When cutting biscuits, never twist the cutter;

  25. that will seal the edges and prevent proper rising.

  26. If the cutter is not cutting all the way, consider a

  27. new cutter.
