  2. CHEESECAKE WITH HAZELNUTS

  6. 1 1/2 c Vanilla wafer crumbs, finely

  7. 3/4 c Hazelnuts, shelled, toasted,

  8. --ground

  9. 2 tb Butter or margarine, melted

  10. --FILLING--

  11. 3 pk Cream cheese, 8-oz,room temp

  12. 1 c Granulated sugar

  13. 3 ea Eggs, lightly beaten

  14. 3 tb Creme de cocoa

  15. 1 pt Sour cream

  16. 2 tb Granulated sugar

  17. 1 ea Whole hazelnut, shelled

  18. For crust: Combine vanilla wafer crumbs, hazelnuts,

  19. sugar and melted butter in medium bowl and blend

  20. thoroughly. Pat mixture into bottom and sides of

  21. 8-inch springform pan. Refrigerate until firm, approx

  22. 30 minutes. Preheat oven to

  23. 300 degrees. Bake crust

  24. minutes. Let cool completely.

  25. For Filling: Preheat oven to 350 degrees. Beat cream

  26. cheese at low speed in large bowl of electric mixer

  27. until smooth. Gradually beat in 1 cup sugar. Add eggs

  28. and creme de cocoa and blend until completely smooth,

  29. stopping once to scrape down sides of bowl. Pour into cooled crust. Bake until set, about 45-50 minutes. Let

  30. cool slightly. (Retain oven temperature at 350

  31. degrees.)

  32. Combine sour cream and remaining sugar in medium bowl

  33. and blend well. Using rubber spatula, spread mixture

  34. 1/2 inch of edge. Bake

  35. minutes.

  36. Preheat broiler. Run cheesecake under broiler,

  37. watching carefully, until top is lightly browned,

  38. 1-2 minutes. Let cool. Refrigerate at least

  39. hours, or overnight. Cheesecake can be refrigerated up

  40. to one week. Set the hazelnut in center of cake before

  41. serving. Serves 8-12. This taken from my mother's recipe collection, she got
