  1. Marinated Shrimp Salad

  2. 3 cups peeled, deveined cooked shrimp, coarsely chopped

  3. 1 small onion, minced

  4. 1/2 cup olive or vegetable oil

  5. Juice of three limes

  6. Salt and ground black pepper

  7. 3 cups cooked rice

  8. 2 large avocados, peeled, seeded, and diced

  9. 1/2 cup chopped pitted green olives

  10. 3 tablespoons finely chopped cilantro

  11. 3 jalapeno peppers, seeded, deveined, and finely chopped

  12. Whole shrimp to garnish

  13. Cilantro for garnish

  14. Combine shrimp and onion in large mixing bowl. Whisk oil into lime

  15. juice; add salt and pepper to taste. Pour dressing over shrimp and onion; marinate two hours. Add rice, avocados, olives, cilantro

  16. and jalapeno peppers; toss lightly but thoroughly. Garnish with

  17. whole shrimp and cilantro sprigs, if desired. Makes 6 servings.
