  1. 1 tablespoon bottled seasoned stir-fry oil

  2. 12 ounces pork cutlets, cut diagonally in 3/4-inch-wide strips

  3. 1 large cucumber, halved, seeded and sliced (2 1/2 cups)

  4. 1 box (5.7 ounces) Mediterranean curry couscous (with spice packet)

  5. 1/4 cup finely chopped fresh cilantro

  1. Heat stir-fry oil in a large nonstick skillet over medium-high heat. Add pork in 2 batches and stir-fry each batch 30 to 45 seconds until no longer pink. Remove to a bowl with a slotted spoon.

  2. Add cucumber to skillet and stir-fry 45 seconds to 1 minute until crisp-tender. Add to bowl with pork; stir to mix. Cover loosely to keep warm.

  3. Put 1 1⁄3 cups water and contents of spice packet (omit any olive oil or butter called for on packet) into same skillet. Bring to a boil, reduce heat to low, cover and simmer 2 minutes. Stir in couscous, cover, remove from heat and let stand 5 minutes. Fluff couscous lightly with fork.

  4. Spoon pork and cucumbers in center of serving platter. Surround with couscous and sprinkle with cilantro. Note: If your skillet has no lid, use a baking sheet or pizza pan as a cover.
