  2. SWEET GREEN TOMATO AND CORN PICCALILLI

  7. 5 ea Green tomatoes, thin sliced

  8. 2 tb Salt

  9. 2 c White vinegar

  10. 2 c Sugar

  11. 1/2 ts Whole cloves

  12. 1/2 ts Ground cinnamon

  13. Kernels from 3 ears corn

  14. -- uncooked 1/2 ea Red bell pepper, diced small

  15. 1/2 ea Green bell pepper

  16. -- diced small 1 ea Red onion, diced small

  17. Rub tomato slices with salt and allow to stand overnight, covered and refrigerated. In the morning,

  18. squeeze the tomato slices between layers of

  19. cheesecloth to remove excess moisture. Set aside. In

  20. a large saucepan combine the vinegar, sugar, cloves

  21. and cinnamon. Bring to a boil. Remove from the heat.

  22. Add reserved tomatoes; stir well. Add the remaining

  23. ingredients and mix thoroughly. This piccalilli will

  24. keep, covered and refrigerated, several weeks. - - - - - - - - - - - - - - - - - -
