  1. 2 teaspoons salt

  2. 1 cup wild rice

  3. 1 cup converted rice

  4. 1 yellow onion peeled and cut into 1/4" dices

  5. 3 tablespoons butter

  6. 1/2 pound mushrooms sliced

  7. 1/2 teaspoon freshly ground black pepper

  1. In 3 quart heavy lidded saucepan bring 6 cups of water to a boil then add salt and wild rice.

  2. Cover and simmer over low heat 30 minutes then add converted rice to pot without stirring.

  3. Cover and continue cooking another 15 minutes but do not remove lid.

  4. Let rice sit 5 minutes after finishing cooking.

  5. In the meantime sauté onion in butter for 5 minutes then add mushrooms and sauté 5 minutes.

  6. When rice is finished stir in mushrooms, onions, and black pepper then serve hot.
