  1. 1 lb. shrimp

  2. 1 cup half and half or milk

  3. 1/2 cup flour

  4. 1/3 cup salad oil

  5. 1/3 cup olive oil

  6. Sauce :

  7. 1 egg yolk

  8. 1 1/2 T. lemon juice

  9. 1 T. chopped parsley

  10. 1 T. chopped chives

  11. 1 stick butter

  12. 2 cloves garlic

  1. Clean and devein shrimp and soak in half and half for 10 minutes.

  2. Drain and dredge in flour to coat.

  3. Saute in oil over medium heat for 5 minutes. Do not turn shrimp.

  4. Remove shrimp and place on baking pan.

  5. Broil 4-5 inches from heat for 5 minutes.

  6. Sauce:

  7. Beat egg yolk with wire whisk in a small saucepan.

  8. Add 1½ T. lemon juice and ½ stick butter. Stir constantly until butter is melted.

  9. Add remaining butter (½ stick), 1 T. Parsley, 1 T. chives and 2 cloves minced garlic.

  10. Stir until butter is melted.

  11. Pour over cooked shrimp and serve immediately.
