  2. OYSTER-MUSHROOM CHOWDER

  6. 1 qt Oysters

  7. 1 c Oyster liquor 3 tb Butter

  8. 1 tb Flour

  9. 1 c Milk

  10. 1/2 c Cream

  11. 2 tb Shallots, minced

  12. Salt and pepper

  13. 1/2 lb Mushrooms

  14. 2 ts Parsley, minced

  15. Heat oysters in liquor over low heat until edges curl.

  16. Drain, saving liquor. Melt 1 tbs butter, blend in

  17. flour, add milk gradually, stirring constantly. Bring

  18. to boiling and cook 1 minute. Add cream, shallots,

  19. parsley, salt and pepper. Warm mushrooms in remaining

  20. butter until heated but not brown. Combine mushrooms,

  21. oysters, and oyster liquor to cream sauce. Serve
