  1. 1 cup sifted all-purpose flour

  2. 1 cup whole wheat flour

  3. 1/2 teaspoon salt

  4. 2 tablespoons butter, melted

  5. 1/2 cup water

  1. Combine the flours and salt in a bowl; mix well and stir in butter and water to make a stiff dough; cover and let rest 1 hour.

  2. Turn dough onto a lightly floured surface and knead until elastic.

  3. Break off into 1-inch balls and roll out into very thin rounds.

  4. (It will be necessary to exert great pressure to roll thin.) Bake on a hot, lightly greased griddle, over low heat, turning frequently, until lightly browned, 3 to 4 minutes.
