  3. 1 cup finely chopped cucumber -- peeled if desired

  4. 2 tablespoons chopped fresh mint or parsley -- (or)

  5. 1 tablespoon dried mint or parsley

  1. In a small mixing bowl, combine all of the ingredients. Cover and chill until ready to serve.

  2. NOTE: This is a comforting companion to almost any highly spiced dish. Spoon it over the top or serve it on the side.
