Pour enough water to cover the beans and add salt pork, garlic, onion, chili powder, oregano and cumin. First, bring the mixture to a boiling temperature and then, reduce heat to medium low. Simmer for about 4 hours, or until pinto beans can be mashed easily with a fork. Check seasoning and add more salt, if required. When the mixture thickens, remove from heat. You can serve this with corn bread and chow chow.
