  1. Dough:

  2. 1 1/4 c Flour

  3. 1/2 ts Baking powder

  4. 1/4 ts Salt

  5. 1 tb Sugar

  6. 2 tb Oil

  7. 1 Egg

  8. 4 tb Warm water

  9. Filling:

  10. 3 lb Apples, peeled & sliced

  11. 1/2 c Raisins

  12. 1 ts Lemon juice

  13. 1/4 c Sugar

  14. 1 ts Cinnamon

  15. 1/4 ts Nutmeg

  16. 1 ts Vanilla

  17. Dough: Sift dry ingredients together. Add oil and egg, and water to bind. Turn out on a floured board. Knead until smooth and spongy. Set in a bowl, sprinkle with flour, cover with plastic wrap, and chill

  18. 30 minutes. Filling: Combine dry ingredients in a bowl, sprinkling lemon juice over apples to prevent discoloration. Roll dough very thin. Brush with oil. Spread apple mixture along long end, and roll as for jelly roll. Place roll in a greased utility pan. Brush top with beaten egg. Bake at

  19. 350F (180C) until brown. Baste with orange juice if apples are not juicy enough.
