  1. 1 ripe, firm avocado

  2. 1 Cup cooked baby shrimp

  3. 2 Tablespoon sour cream

  4. 1 Tablespoon finely chopped chives

  5. 2 Teaspoon finely minced garlic

  6. 2 Tablespoon lemon juice

  7. 2 Teaspoon dry white wine

  8. 2 Tablespoon finely chopped red pepper

  9. 1-2 Teaspoon Dijon mustard

  1. Preparation : Peel avocado, discard pit and slice in half. Scoop out center, leaving 3/8" of avocado flesh inside shells. Rub inside the shells with lemon juice. Dice avocado flesh, and mix with remaining ingredients. Arrange shells on a bed of red-leaf lettuce and spoon in shrimp mixture. Enjoy!
