  1. Tofu

  2. 1 block tofu , extra firm

  3. Vegetable oil Vegetables

  4. 4 Tbsp vegetable oil

  5. 2 onion s, peeled and chopped

  6. 2 garlic cloves, crushed

  7. 1-inch piece ginger root, chopped

  8. 1 tsp garam masala

  9. 1 tsp ground turmeric

  10. 1 tsp chili powder

  11. 3 cups frozen pea s

  12. 1 cup canned chopped tomato es

  13. 1/2 cup vegetable stock

  14. salt and pepper to taste

  15. 2 Tbsp fresh cilantro , chopped

  1. Press liquid out of tofu, cube, and fry in small amount vegetable oil until golden. Remove from pan and drain on paper towels.

  2. Saute onions, garlic and giner in oil, stirring frequently. Stir in the spices and fry gently for 2 minutes. Add the peas, tomatoes, and stock and season with salt and pepper. Cover and simmer for 10 minutes, stirring occasionally, until the onion is tender. Add the tofu cubes an cook for five minutes more. Sprinkle with cilantro and serve at once.
