  1. 4 salmon fillets (6 to 8 ounces each). For a super-quick after-work meal, use smaller pieces of fish.

  2. 1/3 cup extra-virgin olive oil

  3. 1/4 cup fresh lemon juice

  4. 1/4 cup fresh herbs

  5. 2 Tablespoons Dijon mustard

  6. Salt & Pepper

  1. • Preheat oven to 450 degrees.

  2. • Season Salmon with salt and pepper.

  3. • Roast on a parchment-lined baking sheet until fish flakes easily, 8 to 10 minutes.

  4. • Meanwhile, in a blender, combine Extra-Virgin Olive Oil, Lemon Juice, Herbs and Dijon Mustard.

  5. • Blend until smooth; season with salt and pepper.

  6. • Drizzle vinaigrette over salmon.
