  2. 1 cup 110g / 3.9oz Diced carrots

  3. 1/2 cup 55g / 1.9oz Diced celery

  4. 1 cup 237ml Drained canned mushrooms

  5. 2 Garlic cloves - minced

  6. 1/2 teaspoon 2 1/2ml Dried oregano

  7. 3 cups 711ml Bottled spaghetti sauce (use your favorite brand)

  8. 8 Refrigerated manicotti tubes (large)

  9. 3 tablespoons 45ml Parmesan cheese

  10. 1/4 cup 23g / 0.8oz Minced fresh parsley - for garnish

  1. Recipe Instructions Preheat oven to 350 degrees. In a skillet heat olive oil. Add carrot, celery and cook for 3 minutes. Then add mushrooms, garlic, oregano and cook, stirring for 3 minutes more. Stir in spaghetti sauce. Arrange manicotti tubes in a 9- by 13-inch baking dish. Spoon sauce over manicotti and sprinkle with Parmesan cheese. Place in oven and cook for 20 minutes. Uncover and bake for 5 to 10 minutes more until bubbling and heated through. Serve each portion topped with fresh parsley. This recipe yields 4 servings.
