  1. 1 cup chawli (cow pea / lobhia)

  2. 1 cup rice (chawal)

  3. 1 cup rice flour (chawal ka atta)

  4. handful urad dal (split black lentils)

  5. 2 cups spinach (palak)

  6. 1 cup chopped mint leaves (phudina)

  7. 10 green chillies, chopped

  8. 1 onion, chopped

  9. 1/4 cup chopped ginger (adrak)

  10. 2 tbsp fennel seeds (saunf)

  11. 1/2 cup cumin seeds (jeera)

  12. 2 pods cardamom (elaichi), powdered

  13. 1/2 bunch coriander (dhania) leaves

  14. 1/2 cup peanuts

  15. salt to taste

  16. oil to cook the dosas

  1. Soak b-e peas & rice for 1 hr.

  2. Add spinach& grind to a dosa bater consistency adding water.

  3. Add rice flour & salt, baking soda.adjust the consistency.

  4. Add the rest of the ingredients and mix well for even distribution except Coriander& peanuts.

  5. Heat pan & spread batter thin for crispy dosas.

  6. Add chopped coriander & peanuts on one side of the dosa when its still wet On the pan.

  7. Enjoy the burst of flavors while hot .complements well peanut or tomato chutney.
