  2. 3/4 teaspoon(s) salt

  3. 2 cup(s) 1/2-inch cubed mango

  4. 1 1/2 cup(s) 1/2-inch cubed papaya

  5. 2 medium avocados , peeled, cubed

  6. 1/2 cup(s) onion , chopped

  7. 1/2 habanero pepper , finely chopped

  8. 1/3 cup(s) cashews , chopped and toasted

  9. 1/2 cup(s) parsley , chopped

  10. 2 tablespoon(s) fresh lemon juice

  11. 3 tablespoon(s) olive oil

  12. 1/8 teaspoon(s) ground black pepper

  1. Bring 2 cups water to a boil in a medium stockpot.

  2. Add black rice and 1 teaspoon salt. Cook for 25 minutes, until tender. Drain, rinse with cold water, and blot dry.

  3. Toss in remaining ingredients. Serve immediately.
