  1. 3 1/2 tablespoons salad dressing, creamy ranch low fat

  2. 2 1/2 tablespoons chipotle salsa

  3. 1/2 teaspoon orange zest grated

  4. 4 each flour tortillas, whole wheat 8-inch

  5. 12 ounces turkey leftover, shredded

  6. 1 each avocado ripe, pitted, peeled, and sliced

  7. 2 cups mixed greens or lettuce, arugula or cilantro

  8. 1 1/2 cups jicama grated

  9. 1 each tomato thinly sliced

  10. 2 each scallions, spring or green onions thinly sliced, both white and green parts

  11. 1 x salt and black pepper to taste, prefer freshly ground pepper and sea salt*

  1. In a small bowl, mix together the ranch dressing with the salsa and orange zest until well combined.

  2. Arrange the tortillas on a working surface or a cutting board, and spread the ranch mixture evenly over each one, leaving about a 1-inch border on all sides.

  3. Layer the turkey, avocado, greens, jicama, tomato, and green onions evenly over each tortilla, still leaving a border.

  4. Season with salt and pepper.

  5. Roll up tightly and it should look like a pinwheel.

  6. Cut each wrap nto halve or third.

  7. Serve.
