  9. 250 g rice noodles

  10. 200 g baby corn -- sliced

  11. 200 g mangetout -- shredded

  12. 200 g jar red peppers in bring -- drained and sliced

  13. 100 g roasted salted cashew nuts

  14. fresh coriander -- to garnish

  15. -- For the dressing --

  16. 2 1/2 cm piece fresh ginger -- grated

  17. 1 garlic clove

  18. 1 tsp light muscovado sugar

  19. 2 tbsp soy sauce

  20. 2 tbsp white wine or sherry vinegar

  21. 6 tbsp olive oil

  23. 1. Soak the rice noodles according to the packet instructions. Drain, then

  24. rinse with cold water and drain again.

  25. 2. Cook the corn and mangetout in lightly salted boiling water for 1

  26. minute. Drain and rinse in cold water. Drain thoroughly and add to the

  27. noodles with the peppers and spring onions.

  28. 3. To make the dressing, whisk together all the ingredients. Pour the

  29. dressing over the noodles and vegetables, and toss together to mix well.

  30. Season to taste. Sprinkle over the cashew nuts and garnish with the fresh

  31. coriander.
