  1. 1 1/5kg white thin skin potatoes, peeled and diced

  2. 30ml white vinegar or cider vinegar

  3. 175g jarred, sliced pimento peppers, drained and chopped

  4. 120g frozen sweet peas

  5. 1 small white onion, peeled and left whole

  6. 75g mayonnaise or reduced fat mayonnaise or, just enough to bind salad

  7. Salt and pepper

  1. Mum's potato salad with pimento and peas 1) Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return potatoes to hot pot to dry them. Sprinkle potatoes with vinegar. Transfer potatoes to a bowl and let them cool.

  2. When potatoes have cooled, add pimento peppers and peas to the bowl. Using a hand held grater, grate the small white onion over the potatoes. The onion juice is what makes this salad so good. Add 75g of mayonnaise dressing to the bowl, or to your liking, to bind.

  3. Season potato salad with salt and pepper, to taste.

  4. Serve immediately or transfer to plastic serving wear and pack up for your picnic. Keep this salad in your cooler with beverages or chill until ready to travel.
