  1. 350 grams chickpeas (garbanzo beans)

  2. 175 grams bulgur wheat

  3. 1 cup olive oil

  4. 2 each lemon juice, up to

  5. 3 lemons

  6. 50 grams wild rice

  7. 2 teaspoons cumin ground

  8. 1 teaspoon coriander ground

  9. 1 bunch scallions, spring or green onions chopped*

  1. Soak bulgar wheat in half olive oil, juice of 2 lemons and 125ml boiling water overnight.

  2. Cook wild rice in boiling water til it begins to burst - 20 mins.

  3. Put rice, bulgar wheat and chickpeas in together.

  4. Warm ground cumin and coriander in remaining olive oil for 2 mins. Pour over chickpeas etc.

  5. Stir in spring onions and some lemon juice.

  6. Season and serve.
