  1. 475ml water

  2. 190g brown rice

  3. 4 tablespoons diced red onion

  4. 1 stick celery, diced

  5. 4 tablespoons dried cranberries

  6. 125ml balsamic vinaigrette salad dressing

  7. 1 tablespoon sugar

  1. In a saucepan, bring water to the boil. Stir in rice, cover and reduce heat to low. Simmer for 45 to 60 minutes or until done.

  2. Transfer rice to a serving bowl and stir in onion, celery, cranberries, dressing and sugar. Cover, refrigerate and serve cold.
