  1. Vegetable oil 2 Tablespoon

  2. 1 (2-1/2- to 3-lb.) blade-cut beef chuck roast

  3. Cilantro leaves 1/2 Cup (16 tbs)

  4. Orange juice 1/2 Cup (16 tbs) (Orange-Flavored Master Sauce:)

  5. 3/4 cup medium Japanese soy sauce

  6. Brown sugar 1/2 Cup (16 tbs) (Orange-Flavored Master Sauce:)

  7. 2 whole star anise

  8. Ginger root slice 2 , smashed (Orange-Flavored Master Sauce:)

  9. Orange peel 1 Teaspoon , freshly grated (Orange-Flavored Master Sauce:)

  10. Green onion 1 , cut in half (Orange-Flavored Master Sauce:)

  11. Dry white wine 1/4 Cup (16 tbs) (Orange-Flavored Master Sauce:)

  1. Directions Prepare Orange-Flavored Master Sauce.

  2. Heat a wok or medium-size saucepan over medium-high heat 1 minute.

  3. Add oil.

  4. When oil is hot, add beef; saute on all sides.

  5. Add Orange-Flavored Master Sauce.

  6. Bring to a boil.

  7. Reduce heat to medium-low.

  8. Cover pan and simmer beef 1-1/2 hours or until tender.

  9. Cool beef in sauce.

  10. Remove and discard star anise, gingerroot and green onion.

  11. Cut beef in paper-thin slices.

  12. Arrange slices overlapping on a serving platter.

  13. Garnish with cilantro.

  14. Reheat sauce and serve with beef, if desired.
