  1. 2 tbsp olive oil

  2. 900g whole piece of chuck beef

  3. Salt and freshly ground black pepper

  4. 1 large onion, chopped into eighths

  5. 1 tbsp wholegrain mustard

  6. 150ml Madeira wine

  7. 30g dried porcini mushrooms, soaked in

  8. 120ml warm water for 20 mins, strained, and liquid reserved

  9. 600ml hot beef stock for the slow cooker (900ml for the traditional method)

  10. Handful of flat-leaf parsley, finely chopped
