  1. 3/4 pound boneless beef chuck roast

  2. Salad oil 1 Teaspoon

  3. Salt 1/2 Teaspoon

  4. Pepper 1 Dash

  5. Water 3/4 Cup (16 tbs)

  6. 2 carrots pared and halved

  7. Onion 1 Small , quartered

  8. Potatoes 2 Medium , quartered

  1. Directions In heavy skillet, brown meat slowly on all sides in hot oil.

  2. Season with salt and pepper.

  3. Add water; cover and simmer for 1 hour, adding water if necessary.

  4. Add carrots, onion, and potatoes.

  5. Continue to simmer 45 to 60 minutes longer or till vegetables and meat are tender.

  6. Serve with skimmed pan juices (do not thicken).

  7. Trim with parsley.
