  1. 2 lamb shanks

  2. 1 clove garlic, pressed

  3. 1 onion , sliced

  4. 1/2 green pepper , sliced

  5. 1/2 t. thyme salt & pepper

  6. 1/2 can tomato juice

  7. 2 carrot s, diced water

  1. Brown shanks in oil over medium high heat until brown on all sides. Remove from pan. Add garlic, onion, green pepper and carrots to pan and saute until lightly browned. Add tomato juice, thyme & water. Place in a casserole. Cover. Bake at 350° for 2-½ hours. Add potatoes if desired and bake for 30 minutes more. cook until meat is very tender.
