  2. 1 Spam luncheon meat - (7 oz) - diced

  3. 1 Whole-kernel corn - (8 3/4 oz) - drained

  4. 1/2 cup 55g / 1.9oz Chopped celery

  5. 1/4 cup 36g / 1 1/3oz Shredded Monterey Jack cheese

  6. 1 tablespoon 15ml Minced onion

  7. 1 Freshly-ground black pepper

  8. 3 tablespoons 45ml Italian dressing

  9. 3 cups 711ml Shredded lettuce

  10. 1 Pimentos - cut into strips

  1. Recipe Instructions Simmer pepper halves in boiling water 2 minutes, making sure peppers are completely covered. Drain and rinse with cold water; refrigerate until cold. Combine Spam, corn, celery, cheese, onion, and pepper; mix with dressing. Spoon onto pepper halves. Divide lettuce into 4 salad plates; place 2 filled peppers on each plate. Garnish tops with pimento strips. This recipe yields 4 servings.
