  2. CITRUS SAUCE FOR FISH

  5. 1 c Water

  6. 1/4 c Lime juice

  7. 1/2 c Soy sauce

  8. 1/4 c Orange marmalade, cut finely

  9. 3 tb Cornstarch

  10. 1/4 c Water

  11. 1 1/2 ts Finely grated lemon rind,

  12. - i.e. lemon zest

  13. Bring water, lime juice, soy sauce, and marmalade to a

  14. gently boil until marmalade dissolves. Mix 3

  15. tablespoons of cornstarch with the remaining 1/4 cup

  16. of water, and add to the mixture. Return mixture to a

  17. gently boil until it thickens. Add lemon rind and stir. Remove from heat, and let stand until the sauce

  18. reaches room temperature.
