  2. MARINADE FOR FISH STEAKS - CHICKEN BREAST

  6. 1 1/2 lb Fish steaks for skinless

  7. Chicken breasts (If fish,

  8. Suggest swordfish, monkfish

  9. Halibut, etc.)

  10. 2 tb Ketchup

  11. 1 tb Fresh lemon juice or Equivalent of concentrate

  12. 1 Clove garlic, minced

  13. 1 t Oregano

  14. 1/2 ts Salt

  15. 1 tb Olive oil

  16. 1/4 c Orange juice

  17. 1/4 c Dry vermouth

  18. 1/4 c Chopped parsley

  19. Place meat (fish or chicken breasts) in shallow

  20. casserole. Combine ketchup, lemon juice, garlic,

  21. oregano, salt, olive oil, orange juice, vermouth and parsley; pour over meat. Marinate several hours or overnight in refrigerator. Preheat broiler and grease

  22. broiler pan with oil. Broil fish for 5-15 minutes or until it flakes easily. For chicken, broil 25-30

  23. minutes or until done. Heat marinade and spoon over

  24. fish. Serves 4. The chicken breast option is great on

  25. the grill. May want to double marinade amounts and use

  26. extra as a sauce over potatoes or rice. Basic recipe
