  3. 2 medium apples -- peeled and chopped

  4. 1 medium onion -- chopped

  5. 1 medium red bell pepper -- chopped

  6. 1 cup apple juice

  7. 1/4 cup packed brown sugar

  8. 1 cinnamon stick

  9. 1/2 teaspoon ground ginger

  10. 1 envelope unflavored gelatin

  11. 1 can sliced peaches in juice --

  12. drained and chopped -- (reserve juice)

  1. Bring apples, onion, red pepper, apple juice, sugar,cinnamon and ginger to a boil, then reduce heat andsimmer for 15 minutes. Remove cinnamon stick.

  2. Meanwhile, sprinkle gelatin over reserved peach juiceand let stand for one minute. Stir over low heatuntil gelatin is completely dissolved. Stir gelatinand peaches into apple mixture. Place in a 5 cup moldand chill overnight. Unmold before serving.
