  5. 1 lg Can plum tomatoes, crushed

  6. 1 T Parsely

  7. Pinch of oregano

  8. Salt & pepper

  9. 4 T Olive oil

  10. 2 ea Garlic cloves, chopped

  11. 2 lb Whole squid w/ tentacles

  12. 1/2 c Dry sherry

  13. Prepare squid for cooking:

  14. Separate tentacles from sac, squeeze out bony beak. Wash sac

  15. thoroughly, removing translucent bone. Peel off any outer skin. Cut sac into rings. Tentacles may be left whole or cut in half.

  16. Prepare the sauce:

  17. Add tomatoes to saucepan with parsley, oregano, salt and pepper.

  18. Simmer for 30 minutes.

  19. In a frying pan, add olive oil and lightly brown garlic cloves. Add

  20. 10 minutes. Add

  21. 1/2 cup dry sherry,

  22. stir; pour into tomato sauce and simmer gently for about 15 minutes.

  23. Serve over your favorite pasta.
