  1. Zucchini Pickle Relish

  2. 10 cups grated zucchini

  3. 4 cups grated onions

  4. 5 tbsp. salt

  5. 2 1/4 cups white vinegar

  6. 4 1/2 cups white sugar

  7. 1 tbsp nutmeg

  8. 1 tbsp dry mustard

  9. 1 tbsp turmeric

  10. 1 tbsp cornstarch

  11. 1/2 tsp. freshly ground pepper

  12. 2 tsp. celery salt

  13. 2 sweet red peppers, finely chopped

  14. In a large mixing bowl, stir together zucchini, onions, and salt,

  15. and let stand overnight. In the morning, rinse and drain the

  16. zucchini and onions through a sieve. Add all the ingredients to

  17. a large preserving kettle, stirring to blend. Bring to a boil,

  18. reduce the heat, and let the relish simmer for about 1 hour, until

  19. the mixture thickens. Ladle immediately into sterilized pint jars.

  20. Seat at once. Store in a cool place.

  21. 7 to 8 pints of relish.
